SULLIVAN'S COVE FRENCH OAK EX-TAWNY SINGLE CASK WHISKY
Sullivans Cove Distillery stands as one of the defining names in modern Australian whisky, helping place Tasmania firmly on the global spirits map. Established in Hobart in the 1990s, the distillery built its reputation through patience rather than scale, favouring small-batch production, long maturation, and an unhurried approach to cask selection. Its whiskies—often matured in French oak, American oak, or richly seasoned fortified wine barrels—are noted for texture, depth, and a distinctly elegant house style that balances orchard fruit, spice, malt richness, and polished oak.
The distillery’s international breakthrough came when its French Oak expression won major global accolades, a moment that signalled Australia was no longer an outsider in the whisky world. Yet beyond awards, Sullivan’s Cove remains compelling because it embodies Tasmania’s strengths: cool-climate maturation, pristine water, and a fiercely independent craft ethos. Collectors chase its single casks, but serious drinkers return for something rarer—precision, character, and a sense of place in every bottle.
Boasting a depth and refinement that can only come with age, our Old & Rare French Oak single casks are matured for a minimum of sixteen years in French oak casks previously used to age Australian Tawny Port-style fortified wine. Aside from the notes of juicy dark fruits, chocolate, spice, nuts and earthy herbal nuances, these single casks display incredible complexity and length of palate.
