Established in Hobart in the 1990s, the distillery built its reputation through patience rather than scale, favouring small-batch production, long maturation, and an unhurried approach to cask selection. Its whiskies—often matured in French oak, American oak, or richly seasoned fortified wine barrels—are noted for texture, depth, and a distinctly elegant house style that balances orchard fruit, spice, malt richness, and polished oak.

Boasting a depth and refinement that can only come with age, our Old & Rare French Oak single casks are matured for a minimum of sixteen years in French oak casks previously used to age Australian Tawny Port-style fortified wine. Aside from the notes of juicy dark fruits, chocolate, spice, nuts and earthy herbal nuances, these single casks display incredible complexity and length of palate.
